i have been smoking, grilling, and Barbecuing for many years. i previously owned a thermostatically controlled electric wood-chip smoker that was way more hype and expense than it was worth. Going back to simplicity, (The fancy one failed in less than 1 years use) i bought a Big Chief and have been extremely pleased with the results. i can honestly say i've done 30 pounds of beef jerky alone in this smoker. The salmon and cheese i have smoked were excellent as well. No smoking process is completely "hands-off", but the Big Chief is a simple, honest platform that will allow you to produce wonderful results. Their wood chips are inexpensive and work perfectly in the smoker. Also, IF you should ever need them, replacement parts and readily available, and it's made here in the USA! Anybody remember Grandpa's smoked meat back in the day? It was probably done on a Chief. 'Nuff said ;)

The Big Chief has decreased in value over the last couple years. My buddy has one and the metal used now is so much thinner. Those walls need to be made of thicker metal. The door doesn't close properly at the top. I had to fix it with some wire and will make some clips to hold it in place. It pushes inward at the top so that some heat is lost. The older models had side handles and they would be helpful in picking it up. The meat is great; everyone loves it. There will be a lot of jerky going out for Christmas gifts this year! Do buy the nylon screens if you are making jerky. They are easy to clean and a real must for jerky making. Make sure you follow directions and don't set it on wood.

I have owned the Little Chief for years and the only complaint I had was that it was too small. Now, with the Big Chief, I can load an entire steelhead in it and smoke it in six or eight hours. I know there are lots of other good smokers out there, but for me the Big Chief does a great job at a fair price. Just plug it in and fill the pan with chips and you are only hours away from some excellent smoked meat. Clean-up is easy if you spray the racks generously with Pam.
