I've cooked/smoked Tri-tip Brisket, Baby Back's, Pork Loins, a whole Prime Rib, and Salmon Steaks.
Controlling the temps very easy with the flame adjustment.
As for Wood....and Heat....
well after I fixed the door it with stove rope, I use 1/4 the wood that was first used without the rope. I don't understand why Masterbuilt would build a quality cooker/smoker and not take the extra step to conserve not only the wood but also the heat. Ya see Masterbuilt doesn't put stove rope around the door and lots of smoke pours out as well as lost heat, thus using more gas to maintain temp. On the hinge side of the door there's a 1/8" gap up the whole side. (That's Not Adjustable)
I also would have liked to have seen Masterbuilt, add a small access door on the bottom for adding wood & water OR Beer. I'm kinda thinking with the addition of a small door for access the price probably would have only been a few extra... Read more

Easy setup, happy with first results. TOTALLY agree with other reviewers that installing the pellet stove rope gasket is a must. Make sure you do it with the door removed, lying horizontal (recommend doing with the door handle and thermometer off so door lays totally flat. Gasket glue is runny, allow glue to set up at least 15 minutes before putting on gasket). YouTube has a good video for seeing how this is done.
Also, adding a caste iron pan (I put an old caste iron griddle) on top of the burner deflector tray is a must. Maintained a nice even smoke. At first I put the soaked wood chunks in the burner deflector tray as instructed but got a raging inferno with GIANT temp spike. Should have listened to an earlier reviewer!! I already had this old griddle which works well, but the other reviewer's idea of an 8" pan would be great. Walmart sells all sizes of Lodge cast iron products reasonably... Read more

While assembling I noticed the holes for the rack supports were not drilled in the correct locations to support the racks level. Instead of returning, I drilled two holes in the support beams in order to correct the deficiency. Seems to have worked pretty good. I smoked a rack of ribs, 2 tri-tip briskets, 6 turkey legs and a turkey breast all at the same time. It all turned out great. Although I would have liked to have a smoker with a separate door for the fire box, I did not have a problem with lost heat due to opening the single door to put more wood chips in. Overall, not a bad deal.
